Quinoa—did you know how amazing this grain is? The World Health Organization states that this South American native is a complete protein with an amino profile similar to that of or at least equal to cow’s milk. It is a good source of B vitamins, Vitamin E, iron, phosphorous, contains more calcium than cow’s milk and 16 % protein (more than any other grain). It is easy to digest and can be sprouted (in 48 hours is ready to eat in salads, soups, etc.). Quinoa comes in a variety of colors and I love to use every chance I get—to stuff squashes, tomatoes, peppers, as tabbouleh, mini savory cakes, etc. Come up with your own recipe and share it!
